My dear fiance, James, has a wicked sweet tooth and found ‘turtle brownie cookies’ at the store and they quickly became a grocery staple. But at $5 for a box of 5 I felt they were more than a little overpriced, so I set out to make them at home.
Not only can I make them for way less (about $6 for the ingredients) but we have them around for a few days/ can share them out if James doesn’t eat them all first is willing to.
Without further ado my “Criminally Easy Turtle Brownie Cookies”

Ingredents:
1 box of brownie mix – I prefer a kind with chocolate chips
1 egg
1 cup of caramel pieces
¼ cup oil
2 TBSP water
Pecans to taste – I use about ¾ of a cup
Directions:
Put all of it in a bowl and mix!
Roll the dough in to balls and refrigerate for 10 or so minutes

Bake on 350° for 10 minutes or until lightly cracked on the top

Tricks I picked up along the way:
- I can’t ever find little caramel pieces at the store so I get a bag and cut them into quarters. About 20 caramels makes a cup and each bag has 2 cups (plus a few for snacking on).

- Since the caramels are cut up they’re a little sticky, so I pour them into the bowl first, then put the brownie mix over them. This way the mix coats them and they don’t all stick together when you’re stirring them.

- I line my baking sheet with parchment paper. When the caramel melts you’ll be glad you don’t have to peel it off a pan.
